In 1905, Joseph Grellier, a confectioner from Saint-Michel-Chef-Chef in the Pays de la Loire region, created the "gallette St Michel", a delicious biscuits intended for the people of his small village.
But his creation started to catch the attention of Parisian women who were enjoying the coastal area for holiday, when his wife Constance decided to bring his products to the beaches packed with holidaymakers: the Galettes quickly rised in popularity until the official St Michel brand was created with the opening of their first factory in 1919.
From then, the company grew steadily, while creating new recipes and offering more and more products, including the famous "Madeleine".
